Sassy Shrimp Scampi

Ingredients

  • 25 Medium Shrimp

Marinade

  • 1/4 Cup The Sassy Olive Star 25 White Balsamic Vinegar www.thesassyolive.com
  • 1/2 Cup The Sassy Olive Everyday Extra Virgin Olive Oil www.thesassyolive.com
  • 4 Cloves Garlic Minced
  • 1 tsp Fresh Basil
  • 1 tsp Oregano
  • To Taste Fresh Ground Sea Salt

Sassy Shrimp Scampi

  • 1/2 Stick Unsalted Butter
  • 1/2 Pound Linguini
  • Previously Marinated Shrimp

Topper

  • 1 block Parmigiano Reggiano Cheese Freshly Grated

Instructions

  • In a medium bowl, add shrimp and all of the marinade ingredients. Mix well and refrigerate for a minimum of 2 hours but preferably overnight.
  • Cook the linguini per the instructions.
  • When the linguini is almost finished cooking, heat a Sauté pan and melt 1/4 stick of the unsalted butter over medium high heat. While the butter is melting drain the linguini and prepare for serving.
  • Add the uncooked shrimp to the sauté pan. IMPORTANT - do not overcook the shrimp. It will only take a couple of minutes to cook. Use the remaining 1/4 stick of unsalted butter for the shrimp sauté.
  • Pour the shrimp and the sauté juices over the linguini on a serving dish.
  • Top with freshly grated parmigiano reggiano cheese AND ENJOY!!!
