I love a great spinach salad! Add bacon and a warm dressing and I am in heaven! The fact that it doesn’t take a lot of time prepare is a bonus. It is also perfect during any season.

How to Make a Warm Bacon Dressing

The recipe below provides two different options for making a warm bacon dressing. Both are great on a spinach salad. Your choice; a red wine warm bacon dressing or a balsamic warm bacon dressing. How can you go wrong with warm bacon fat? Bacon makes everything taste better! The red wine vinegar dressing isn’t as thick as the balsamic dressing but just as delicious.

Ingredients

  • 1 Boneless Chicken Breast
  • Spinach
  • 2 Hard Boiled Eggs
  • 6 Slices Bacon Save the bacon fat for the dressing!
  • Sauteed Mushrooms Optional
  • Croutons Optional

Warm Red Wine Vinegar Bacon Dressing

  • cup Red Wine Vinegar
  • 1 ½ tbsp Dijon Mustard
  • 1 tsp Worcestershire
  • cup Extra Virgin Olive Oil
  • 1-2 tsp Hot Bacon Fat

Warm Balsamic Bacon Dressing

  • cup Balsamic Vinegar
  • 1 ½ tbsp Dijon Mustard
  • 1 tsp Worcestershire
  • cup Extra Virgin Olive Oil
  • 1-2 tsp Hot Bacon Fat

Instructions

  • Grill or bake the chicken breast until the internal temperature reaches 160° F & let it rest for 5 minutes and slice.
  • Prepare Salad: Add to a bowl, Spinach, Sautéed Mushrooms (optional), Bacon, Boiled Egg and Croutons (optional).
    Add Sliced grilled chicken to top of prepared salad.
  • Prepare Dressing on Stove Top: Done by taste testing & combining all ingredients in sauté pan, low heat, approximately five minutes, whisk continually. Drizzle generously on top of grilled chicken spinach salad.
