Melt in Your Mouth Meatloaf

I wanted a title to describe this meatloaf recipe without using the cliche title “Not Your Mama’s Meatloaf” but getting the same message across! It literally does melt in your mouth, hence the title “Melt in Your Mouth Meatloaf” to accomplish just that!

Preheat the oven to 350 degrees.

Heat the olive oil over medium high heat. Sauté the diced celery and onions. Once they are almost tender, add in the minced garlic. Remove from heat and set aside.

In a large bowl or a foil pan for easy cleanup, combine the ground beef, eggs and bread crumbs. I don’t like to get my hands dirty, so I use kitchen cooking grade gloves that I can toss away when I am done.

Get ready to add all the ingredients to the ground beef

Then add the Knorr Homestyle Beef Stock cup, the Lipton Beefy Onion packet and the Heinze ketchup to the ground beef mixture and combine well. Then add the sautéed celery , onion and garlic and combine.

Place it all in a loaf pan. Again, I use a foil loaf pan for an easy clean up! I hate spending all my time at the sink, especially if entertaining guests!

I doubled the recipe for a family gathering

Cook for an hour. Remove and let it rest for 15 minutes. If you don’t let it rest, the meatloaf will fall apart when slicing to serve!

Melt in Your Mouth Meatloaf

While the meatloaf is resting prepare the beef gravy (see the recipe below for details). I like to serve with mashed potatoes, so make sure you have enough gravy for the entire meal!

Ingredients

Meatloaf

  • 1 tbsp Olive Oil
  • 1/2 cup Diced Celery
  • 1/2 cup Diced Onion
  • 2 tbsp Minced Garlic Adjust accordingly to taste. I love garlic!
  • 2 lbs Ground Beef Lean is not recommended
  • 2 Eggs
  • 3/4 cup Plain Bread Crumbs
  • 1 Knorr Homestyle Beef Stock Cup Substitutions not recommended
  • 1 packet Lipton Recipe Secret’s Beefy Onion Substitutions not recommended
  • 1/3 cup Heinze Ketchup

Beef Gravy

  • 1/4 stick Unsalted Butter
  • 2 tbs Flour
  • 1 Knorr Homestyle Beef Stock Pot
  • 1 cup Water

Instructions

  • Preheat oven to 350 degrees.
  • Add olive oil to a sauté pan and heat over medium high heat. Add diced celery and onion to pan and sauté until tender. When close to being tender add the minced garlic in. Make sure to stir occasionally. Remove from heat and set aside.
  • Add the ground beef, bread crumbs and eggs into a large bowl and combine. Note: I like easy cleanup, so I mix it all in a square foil pan and throw it away when done! I also use cooking gloves to mix and toss those away too!
  • Add the Knorr Homestyle Beef Stock cup, the Lipton Beefy Onion packet and the Heinze ketchup to the ground beef mixture. Combine well.
  • Add the sautéed celery and onion and combine with ground beef mixture.
  • Place into a loaf pan (I use foil pans for easy clean up)!
  • Cook for 1 hour. Let stand for 15 minutes prior to serving, otherwise it will fall apart when slicing.
  • While meatloaf is resting, make the beef gravy. Make a roux by adding the butter to a small sauté pan and melting on low heat. add the flour and whisk until combined. Add the Knorr Homestyle Beef Stock and water to a small sauce pan over medium high heat. Bring to a boil. Add the roux.

Notes

This recipe makes one loaf pan. Double the recipe if you want to make two!
