Prep a pot of water to boil the pasta per the package instructions. While waiting for the pasta water to boil, dice the large shallot and the green pepper and set aside.

Once the pasta is cooked, rinse with cold water to cool and drain well with a strainer.

I reuse the pasta pot to mix the ingredients together. Rinse the pot and dry completely. Add the drained pasta back into the pot. Add the diced shallot and green pepper.

Add the dry mustard, garlic powder, sour cream, sugar, salt and pepper. mix well.

Next, add the apple cider vinegar and the mayonnaise. Mix well.

Transfer to a serving bowl and add the optional parsley and sprinkle with paprika. Cover and refrigerate.

Ingredients

  • 1/2 Box Large Elbow Macaroni
  • 1 Large Shallot
  • 1 Medium Green Pepper
  • 3/4 tsp Dry Mustard
  • 3/4 tsp Garlic Powder
  • 3 tbsp Sour Cream
  • 1 tsp Granulated Sugar
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 tbsp Apple Cider Vinegar
  • 1/2 Cup Mayonnaise I prefer Hellman’s
  • 2 Sprinkles Paprika Optional for Garnish
  • 2 Sprigs Fresh Parsley Optional for Garnish

Instructions

  • Prep a pan of water on high heat for pasta and add salt per instructions on package.
  • While waiting for the pasta water to boil, dice the shallot and the pepper.
  • Once the pasta is cooked, rinse under cold water and drain completely in a strainer.
  • Rinse the pasta pot with cold water and dry with a towel. Add the drained pasta back into the pan.
  • Add the diced shallot and pepper.
  • Add the dry mustard, garlic powder, sour cream, sugar, salt and pepper. Mix well.
  • Add the cider vinegar and mayonnaise. Mix well.
  • Garnish with parsley and sprinkle with paprika.
  • Transfer to a serving bowl, cover and refrigerate.
  • Serve and enjoy!
