How do you make French Onion Soup?
This is a non-traditional twist on the original French Onion Soup recipes. It is made with chicken broth instead of the traditional beef broth base. It makes it so much lighter and so much tastier!

French Onion Soup with a Twist
Equipment
- Dutch Oven
Ingredients
- 3 tbsp Unsalted Butter
- 5 Vidalia Onions Thinly Sliced
- 2 tsp Fresh Thyme
- 1 clove Fresh Garlic Minced
- 1 cup Pinot Grigio or Dry White Wine
- 6 cups Chicken Broth
- 1 tsp Salt (to taste)
- 1/2 tsp Fresh Ground White Pepper (to taste)
- 3 cups Gruyere Cheese Grated
- ¼ cup Diced Scallions for Garnish
Onion Soup Croutons
- 1 stick Parisian or French Bread
- 1 tbsp Salted Butter for the bread Melted
- Garlic powder
Instructions
- Using a cast iron Dutch Oven, melt the unsalted butter over medium heat.
- Add the sliced Vidalia onion, stir into the butter, cover and let cook for 30 minutes while occasionally stirring.
- Remove the cover and increase to medium high heat. Carmelize the onions which will take approximately 30 minutes. Stir frequently; do not let the onions scorch!
- Add the minced garlic and the thyme and sauté for a few minutes.
- Scrape the bottom of the pan to loosen the browned bits. Add the wine and scrape again.
- Simmer to reduce the wine to about half.
- Add the chicken broth and the salt. Cover and gently simmer for approximately 30 minutes. Add ground white pepper to taste.
Preparation to Serve
- Preheat the oven on broil.
- Thickly slice the bread, brush with melted butter and sprinkle lightly with garlic and broil on both sides to get it toasty brown and crispy! Watch it carefully so it doesn’t burn and rotate as necessary!
- Place onion soup bowls on a sheet pan (covered with tin foil for easy cleanup).
- Fill onion soup bowls 3/4 to the top. Add the toasted bread slices. Top heavily with gruyere cheese.
- Place in oven but not too close to broiler (three of slots down). Watch closely and remove once the cheese is melted, bubbling and browned. Be careful not to burn it though!
- Remove and let rest for 5 minutes. Place onion soup bowls on a napkin lined plate or under lining and garnish with scallions.
- Serve and Enjoy!
What equipment do I need to make French Onion Soup?
To make French Onion Soup you will need a Dutch oven. We use a Staub Cast Iron Dutch oven. You will also need some soup crocks to place in the oven and to melt the cheese to serve it properly like a pro! If you really want to impress, purchase a set of soup spoons. You can always improvise and make due with what you already have in the kitchen but why not splurge?

I love using a freshly baked Parisian bread stick from the store, sliced thickly and basted with butter and lightly sprinkled with garlic powder and broiled to perfection.
Don’t skimp on the gruyere cheese! If you are lucky, your local store has already grated it for you but don’t fret, you can always grate it yourself!
