The best thing is, you can prepare the Chocolate Molten Lava Cake batter in advance so you can socialize and not be slaving away preparing for dessert!

I suggest putting the dessert plate on top of the ramekin before turning it upside down because the lava cake should slide right out!

Don’t skip the sprinkle of powdered sugar…it really puts it over the top!

Vanilla ice cream is a must!

Chocolate Molten Lava Cake

Wow! Making chocolate molten lava cakes are super easy. You can prepare it ahead and store in the refrigerator the day before you are going to cook it. This makes it a super delicious dessert for a dinner party or just a family dinner.

Ingredients

Grease Ramekins

  • 2 tbsp Salted or Unsalted Butter Do not use cooking spray!

Molten Lava Cake Batter

  • 2 Eggs
  • 2 Egg Yolks
  • ½ tsp Vanilla Extract
  • 1 pinch Salt
  • ¼ cup Light Brown Sugar
  • 2 tbsp All Purpose Flour
  • 1 tbsp Powdered Sugar
  • 8 tbsp Salted Butter 1 stick
  • 6 oz Ghiradelli Bittersweet Baking Chocolate

Toppings (optional but highly recommended)

  • 2 tbsp Powdered Sugar
  • Vanilla Ice Cream
  • Chocolate Sauce
  • ½ oz Ghiradelli Bittersweet Chocolate Shavings
  • Fresh Berries

Instructions

  • Preheat oven to 450° Fahrenheit using middle rack.
  • Generously grease four 6 oz ramekins with butter and place on a baking sheet.
  • In a mixing bowl add the egg yolks, eggs, vanilla extract, salt, light brown sugar, flour and powdered sugar. Beat on high speed for approximately 3 minutes or until completely combined and slightly thickened.
  • While the above mixture is beating, start breaking the chocolate into small chunks.
  • In a microwave safe bowl, cut the salted butter into four squares and melt gradually for 20 second intervals and stirring in between until completely melted.
  • Remove melted butter from microwave and gradually add the chocolate chunks, stirring until completely melted. If needed return to microwave for 20 second intervals until melted.
  • Remove the mixing bowl from the electric mixer and add the melted chocolate mixture. Gently fold until combined with a spatula.
  • Evenly distribute into the ramekins.
  • Bake for 7-8 minutes. The sides will pass a toothpick test but the middle should remain somewhat liquidy.
  • Have all your optional toppings ready to go (powdered sugar, ice cream, chocolate syrup, chocolate shavings and berries).
  • Remove and let sit for 1 minute (do not let them sit longer or the “lava” will continue to cook through)!
  • Turn them upside down onto dessert plates (they should pop out easily).
  • Sprinkle each cake with powdered sugar, add vanilla ice cream, chocolate syrup and then sprinkle chocolate shavings. Add some fresh berries if desired.
  • Serve and enjoy the chocolatey greatness!

Notes

If preparing batter in advance and refrigerating, remove from refrigerator and let sit until at room temperature (approximately 30 – 45 minutes).
