The Best Chicken Fajita Evah!

No, Evah isn’t a typo! We are from Massachusetts and that is how we talk! It doesn’t have to be Cinco de Mayo, this Mexican dish is great any time of year! Looking to cook something fun and delicious? Let’s get cracking!

This is a delicious recipe for chicken fajitas! The secret to the amazing taste is the liquid smoke. This is a KEY ingredient and a must use in my opinion. Well, obviously all of the ingredients are key but just saying, don’t skip the liquid smoke because you don’t have it in your cabinet…go buy it! Also, don’t use too much or it will be overpowering and consume the flavor. A little liquid smoke goes a long way!

I know many have not heard of liquid smoke. We use Wright’s Mesquite Liquid Smoke in our fajitas as shown below.

It makes me hungry just looking at this picture!

This is an easy meal to prepare. Marinate the chicken overnight and then simply sauté the peppers and onions and cook the marinated chicken and your good to go. It will take you longer to put out all the fixings than anything else!

Prepare the marinade and add the chicken in an airtight container or a plastic bag sealed. Keep it in the refrigerator overnight (or for at least three hours). You will want the chicken at room temperature prior to cooking, so plan accordingly.

To prep for cooking, add olive oil to a sauté pan and cook the peppers and onions over medium high heat and lower to sauté or cook them in a cast iron pan on the grill weather permitting!

Cook your marinated chicken in the cast iron pan with your peppers and onions or cook it on the grill in nice weather.

You can even get real fancy and purchase some fajita pan sets to serve the dish in style!

Get all your fixings ready!

I love shredded cheddar cheese, salsa, guacamole, jalapeños and globs of sour cream on my fajitas. So put out all the sides to make this extra special. Some people also like salsa, shredded lettuce and chopped tomatoes, the possibilities are endless!

Heat up your tortillas. We are doing it on the grill with a griddle (25 seconds each side)! You can also purchase a microwaveable tortilla warmer as shown below, which will keep the tortillas warm as you eat. As an alternative, you can place the tortillas between two moistened paper towels and heat in the microwave at 10 second intervals until warm…don’t over do it or they will harden!

Slice your marinated grilled chicken, Plate, Serve and ENJOY!

Chicken Fajita

Ingredients

Marinade

  • 5 Cloves Garlic Crushed or Minced
  • 2 tsp Soy Sauce Kikkoman
  • 1 tsp Salt
  • 1/4 Cup Lime Juice
  • 2 tbsp Olive Oil
  • 1/3 Cup Water
  • 1/2 tsp Liquid Smoke Not Optional! Don’t use too much!
  • 1/2 tsp Cayenne Pepper
  • 1/2 tsp Black Ground Pepper

Everything Else

  • 2 Skinless Chicken Breasts serves 4 – 6 People
  • Sautéed Peppers and Onions 1 Red Pepper, 1 Green Pepper and 1 Vidalia Onion
  • 1 Package Flour Tortillas
  • Optional Fixings: Shredded Cheddar Cheese, Salsa, Guacamole, Jalapeños, Sour Cream, Shredded Lettuce, Diced Tomatoes

Instructions

  • Mix all the above marinade ingredients in a seal tight container.
    Add the chicken breasts to the marinade.
    Marinate the chicken in the refrigerator overnight (or at least 3 hours)!
  • You know the rest…cook the chicken with sautéed pepper and onions. 
    Warm the flour tortillas and put out all the fixin’s!!!
    Fixin’s: Shredded Cheese, Jalapeños, Salsa, Sour Cream, Guacamole, Flour Tortillas, anything else you want!
